Question by chargersfan: Milk allergy, need a substitute for sherbet?
My daughter’s boyfriend is lactose intolerant and my Christmas punch calls for two kinds of sherbet. Obviously, I can’t use it because it’s dairy. Any ideas?

Use sorbet! It’s like sherbet but has no milk.

Question by indiechick: Can I substitute alternative flour for cooking turkey in bag?
Has anyone ever cooked turkey in the bag? I wanted to cook my Christmas Turkey in a bag this year, but then when I went to put it in there, I looked at the directions and it said to put flour in it to avoid sticking. I have a severe wheat allergy, so obviously I didn’t have any flour and prepare it that way, but I wasn’t sure if I could substitute rice flour or corn starch for the flour next year. Does anyone have any ideas?

I would not put flour in the bag. Just omit it.
If it sticks no big deal, means the skin wasn’t going to be crispy and soggy, limp turkey skin is gross and you wouldn’t eat it any way.
Besides if you listen to the “experts” you shouldn’t eat the skin anyway cuz that is where all the fat is. But what do they know….that’s one of the best parts!

Get small chickens or cornish game hens, and try out different recipes on those throughout the year until next christmas and figure out what tastes the best. And try to pick small ones, so you don’t feel bad throwing it out if it doesn’t taste right. Every cook tries and learns through error. Trust me I screw around in the kitchen ALOT and that’s how I find out what tastes good for the holidays.

Question by Cynthia: Can I substitute cake flour or AP flour for wheat gluten free flour?
I have a few recipes I love and Id like to stick with them. However, I have a cake I need to make that the child has a gluten allergy. Can I sub the cake flour or the AP flour for wheat gluten free flour? Thanks

Possibly…gluten is not especially desirable in a cake (or a pie crust) anyway. Check in a cookbook specifically for gluten-free diets to find a recipe that should work. Or, if it doesn’t HAVE to be a cake, there are a number of desserts that don’t have any gluten.

Also, you might try searching at www.allrecipes.com for gluten-free desserts (type ‘gluten-free’ in the search box or in the keyword box).
