Question by Kaiti: Is there a way to make something to substitute for flour?
My friend has a gluten allergy and she can’t have dairy, wheat or flour, but I wanted to make her some thing she could actually eat. I looked on baking sites but I don’t have any of the other flours that it needs (i.e. rice flour, bean flour etc) Help!

Question by fairycharisma: Can you substitute almond milk for evaporated milk in pumpkin pie?
My 5 month old son has a dairy allergy and I am breastfeeding, so, I am on a dairy free diet. With Thanksgiving coming up, I was wondering how substituting almond milk for the evaporated milk in the Libby’s pumpkin pie recipe would effect the outcome? Or what other options I would have for a dairy free pumpkin pie.

run to the store and look for buckwheat flour (it is not made from wheat, the name is just confusing). If you live in an area that has a Whole foods or trader Joe’s or a health food store you can purchase a gluten free all purp. flour mix that you can use for a few weeks. (Bob’s Red Mill is my personal fav.)
If you can’t find any of those, you can order specialty flours online at Bob’s Red Mill. That is probably the easiest course of action if you are simply trying this for a few weeks.
By the way, those alternate flours can not be directly substituted. There is no gluten in them, so they will not “stick” together on their own. Celiacs such as myself use xanthum gum to hold it all together instead of gluten.
