Question by Sit’nTeach’nNanny: What is a fun recipe to make with kids who have allergies but love to cook?
I am a nanny and I watch two amazing kids who are 3 and 5. Unfortunately, the 3 year old is HIGHLY allergic to dairy products and has acid reflux. He is so limited in what he can eat, but he loves to cook. The problem is that he can never eat anything that we make. I need quick easy recipes that the kids can help out with that don’t use eggs, milk, or products from either of these. They love desserts. Any suggestions?

What about Rice Crispy squares? Or would that fall into the “can’t eat” category? They are quick and easy and kids LOVE making them.

Question by Cindy B: Is there an easy way to cook (scald?) milk?
I am looking for a way to completely cook milk without worrying about burning and stirring forever. My daughter has a milk allergy but is now able to tolerate well cooked milk if it is diluted in things like baked goods. I need to feed her cooked milk now daily, but we don’t have home made baked goods daily. I thought I could cook up a batch and then add it to her soy milk for cereal etc.
Any hints?

To scald milk is to bring it to a simmer. That’s when bubbles form around the inside perimeter of the pot, at a constant. Usually, around med.-low to low. Have you tried lactose-free milk ?

Question by Princess madeline JPA: What are some things to cook for a little kid with allergies and a family with dietary restrictions?
My little brother who I’ll be watching all summer can’t eat dairy (milk eggs, yougert) , soy, tomatoes, nuts or shellfish. I keep kosher (I’m a convert to Judaism, the rest of my family is Christian), My older sister doesn’t eat really any vegetables, my step dad is a meat and potatoes guy and my mother can’t eat too many carbohydrates because she has gestational diabetes ( the whole reason my sister and I are sitting is because she is pregnant with twins) .
What can I make that won’t upset any of them or me?

Ummm…to be honest the only thing I guess you can all have without problems is water…
Make one thing for your brother and mom’s allergy needs that you also like and can eat, and if your brother or sister don’t like it they can either suck it up and eat or decide not to and go hungry, or they can cook.

My youngest daughter has a milk allergy so I’ve switched the whole family to soy milk. I’ve heard many people say they use rice milk to cook.
