For Halibut Olympia. I Need The Substitution For The Mayonnaise And The Sour Cream If There Is Any. There Are?
Posted by: Alan in Milk Allergies, tags: Any., Cream.., Halibut, Mayonnaise, Need, Olympia., Sour, Substitution, There
There are allergies to both in the house. As well as a milk allergy. This question was posted last week with answers that wouldn’t work for these allergies.

There is a vegan mayo called Veganaisse, and my mom also recently found vegan sour cream and cream cheese. The cream cheese I think was found at a whole foods store called Wild Oats or just a good whole foods store. The sourcream we found at a store called Sunflower Farmers Market.
The vegan mayo is a little more comon to find at Smiths Market Place, or some place like that. Or other health food markets or in the health/organic section.

Vegan Mayonnaise Substitute (Egg and Dairy Free)
1/2 cup of soy milk
1/4 teaspoon mustard
2 teaspoons of lemon juice
Dash of salt
1/4 teaspoon of paprika
6 teaspoons of vegetable oil
Combine the soy milk, mustard, lemon juice, salt, and paprika in a blender. Use a low setting and do not over mix. Slowly add the oil, one drop at a time. This will cause the mixture to thicken. Once all the ingredients have been added, mix until a smooth texture is achieved.
As with regular mayonnaise, keep it refrigerated.
Makes about 3/4 cup.

Sour Cream substitute: Try plain soy yogurt, especially if used in making dips.

Well you can make your own homemade mayo with either lemon juice or vinegar… what precisely in the mayo is the person allergic to? The only non-negotiable in it is eggs. Here’s a link that shows how to make homemade mayo:http://www.cookingforengineers.com/recip…
Now the sour cream question… I’d say yogurt but you’re saying they’re allergic to milk. Is it an allergy or intolerance? Big difference because if you buy the yogurt with extra bifidas then most “intolerant” people can handle it.
Anyway, on a milk-free website it said you can comine the following to substitute for sour cream.
4 Tbsp corn starch
3/4 cup cold water (I might sub almond or rice milk here)
1/4 cup vinegar
cook the mixture over medium to medium high heat stirring constantly until it simmers for one minute and thickens
Good luck and I hope this helps… It probably won’t taste even close to what you’re used to with the tofu substitution offered by the first answerer. But it might be okay…

Mayo/Sour Cream
Combine in a blender:
1 box soft silken tofu
1 Tbs. lemon juice
1 and 1/2 tsp. sugar
1/2 tsp. salt, or to taste
Blend until smooth and creamy.
Will this work?
